Corn Dogs

Feeling peckish? I always feel like having a little something here and there, especially when I am at home not being particularly active. Sometimes those slow and mellow days, in the comfort of your own home, present themselves as little rewards after a busy work week. So, the less fussy the snack and effort needed to make them, the better.

Shane and I recently had one of those days; it was a lazy Sunday afternoon, the last thing we wanted to do was get dressed (presentably so) and go shopping. We had Russians (thick version of viennas) in the fridge but no rolls to eat them with. Instead of eating them just out of the packet or going to the shop, Shane decided to whip up some “Corn Dogs” using his Mom's mixture. I had never tried them before, so this was a new experience for me.

Corn Dogs are really easy to make and not time consuming either. All you have to do is mix up a batter, dunk the viennas into the mixture and drop them into hot oil until golden brown and crispy. The batter mixture is versatile and can be used for many things. Try it out next time you feel like pecking on some food. I am warning you though, it is not healthy, but it’s filling and something to enjoy once in a blue moon.

Ingredients:

2 Cups self-raising flour

1 Egg

1 Cup milk

Cold water (if necessary)

1 Pack of Viennas/Russians

Oil

Instructions:

1.      Mix the flour, egg and milk together. If you need to make the batter thinner, add drops of cold water to make your preferred consistency.

2.       Heat oil in a pot.

3.       Dunk the viennas into the mixture and place battered viennas in heated oil for 3 - 5 minutes or until golden brown.

4.       After frying place on serviettes to soak up the excess oil.

5.       Serve with your choice of dipping sauce.

Tip: Make sure your oil is heated up enough.
