Banana Cake



World Bake Day is around the corner! I don’t know about you but my social platforms are inundated with beautiful baked goodies. I wish I could just pull the pictures off the screen and eat them then and there. If only technology was that advanced; but perhaps it is for good reason…

There is one campaign running that I must say has caught my attention online and that is; #PledgeToBake. It reminds me of the baking rapport I have going with my neighbour, Jenny. When I am testing new recipes or even making something to showcase on Stuffed, I often hand a few treats over the fence. Today’s recipe is one of Jenny’s. She handed it over last weekend to cheer me up and it certainly did the trick.



It’s a lovely soft sponge that offers just enough sweet without it being sickly. With just a few key ingredients and easy to follow instructions; you’ll be on your way to baking up a treat everyone will enjoy. There is nothing complicated about it… So if you’re looking for something easy for World Baking Day, this is the answer!




 Ingredients:


1 (250ml) Cup Bananas
150g Margarine
1 (250ml) Cup Sugar
2 (500ml) Cups flour
1 tsp baking powder
1 tsp bi-carb
1 tsp vanilla essence
2 eggs
3 Tbs Milk
Pinch of salt

Instructions:
1. Mix butter, sugar and eggs until creamy.
2. Add mashed bananas, and vanilla essence.
3. Sift flour and baking powder and add to mixture.
4. Dissolve bi-carb in milk and add to mixture.
5. Preheat oven 180 degrees and bake for 30 – 35 minutes (or until a toothpick or skewer comes out clean)
